O projeto de formar uma equipe para viajar pelo território brasileiro em busca das nossas riquezas gastronômicas foi concebido pelo empresário Rodrigo Ferraz em 2011. Nos dois anos seguintes, com o nome Expedição Brasil Gastronômico, profissionais de diferentes áreas pesquisaram, registraram e divulgaram a cadeia produtiva gastronômica em 12 estados. Em 2014, a expedição comandada pelo pesquisador Rusty Marcellini passou a se chamar Expedição Fartura Gastronomia e a fazer parte do projeto Fartura, cujo nome é uma referência à diversidade e às riquezas culinárias de nosso país.
